You can dunk it for 24 hrs too, it doesn't really matter. I would actually suggest 24 hrs. And you can touch the cakes, washed or unwashed hands, but washings always good. From what I understand having coarse verm when you dunk and roll will create better mocro-humidity close to the surface and provide better pins.
